No-Bake Lemon Coconut Blueberry Squares – Raw Vegan + Gluten Free Dessert
A nourishing no-bake treat that’s packed with skin-loving ingredients—these raw vegan squares are part cheesecake, part bliss bar, and entirely glow-worthy. Made with whole, real ingredients like wild blueberries, coconut, lemon, and walnuts, this recipe is decadent yet refreshing, anti-inflammatory, and perfect straight from the freezer.

Raw desserts aren’t just tasty—they’re nourishing. When ingredients aren’t exposed to high heat, they retain more of their natural enzymes, antioxidants, and nutrients that support digestion, cellular repair, and overall vitality. Wild Blueberries – Exceptionally rich in antioxidants (more than cultivated blueberries), they fight oxidative stress and free radical damage linked to accelerated aging, dullness, and inflammation.
Coconut – Coconut meat (and the oil derived from it) is antipathogenic due to its lauric acid content combined with other antioxidants present in it, so turn to coconut when you’re in need of an antibacterial and antiviral food. When coconut drops from the stomach into the intestinal tract, it kills off any pathogen it touches. Lemon – Supports collagen with vitamin C, and helps with digestion and lymph flow. Though acidic in taste, lemons have an alkalizing effect on the body and are rich in bioflavonoids that help boost immunity and reduce inflammation.
Dates – Are rich in bioactive minerals, fiber, magnesium, and potassium. They’re a great alternative to refined sugar and help refuel the brain and deliver vital glucose to the liver. Dates also contain a noteworthy amount of amino acids.
Walnuts – Walnuts are one of the most antioxidant rich foods and are an excellent source of omega-3 fatty acids which have anti-inflammatory properties. Walnuts are also high in B-complex vitamins and minerals such as copper, iron, manganese, zinc, calcium, and selenium.
Raw Vegan Lemon Coconut Blueberry Squares Recipe
Crust Ingredients
1 cup soft majool dates (pitted)
1 cup raw walnuts
Pinch of sea salt
Filling Ingredients
1 1/2 cups raw cashews (soaked for at least 4 hours or overnight, then drained)
Zest and juice of 1 lemon
1/3 cup melted coconut oil
1 can (about 1 1/2 cups) full-fat coconut milk
1/2 cup pure maple syrup
1–2 tsp alcohol-free vanilla extract (or measure with your heart)
1/4 cup wild blueberries
Optional: 1–2 tsp wild blueberry juice (for marbling)
Topping: raw coconut flakes, extra lemon zest, and optional fresh blueberries
Directions
Make the crust: Add the dates to a food processor and pulse until a sticky ball forms. Set aside.
Add walnuts and sea salt to the processor and pulse into a fine crumble.
Add the date ball back in and blend until well combined. The mixture should hold when pressed.
Line a small square or loaf pan with parchment paper. Press the crust evenly into the bottom, using the bottom of a glass to flatten it firmly. Use a parchment sheet as a barrier to avoid stickiness.
Freeze the crust while you make the filling (about 15–20 minutes).
Make the filling: In a high-speed blender, combine cashews, lemon juice, coconut oil, coconut milk, maple syrup, vanilla, and a pinch of sea salt. Blend until creamy and smooth.
Stir in the wild blueberries by hand.
Pour the filling onto the frozen crust and smooth the top.
Optional: Add small drops of blueberry juice to the top and use a knife or toothpick to create a marbled swirl.
Sprinkle coconut flakes and lemon zest over the top.
Freeze for at least 4–6 hours or overnight until fully set.
To serve: Remove from freezer, let sit for 5–10 minutes before slicing. Serve chilled. Store leftovers in an airtight container in the freezer for up to 1 month.
